How to Use a Ceramic Citrus Juicer: Lemons, Limes and Small Oranges

Yellow and white handmade porcelain citrus juicer

A ceramic citrus juicer is one of the simplest tools in the kitchen: no batteries, no cables, nothing to assemble. It is also one of the few kitchen tools nice enough to leave out on the counter. Here is how to get the most out of yours.

How a ceramic juicer works

Our porcelain juicers have three parts in one piece: a ridged cone (the reamer) that breaks open the fruit, a bowl that collects the juice, and a pour spout so you can pour straight into a glass, a dressing or a pan. The ridges catch most of the seeds and pulp, so the juice pours out cleaner.

Step by step

  1. Start with room-temperature fruit. Cold citrus gives less juice. If your lemons live in the fridge, leave them out for a while first.
  2. Roll the fruit. Press it firmly against the counter with your palm and roll it back and forth a few times. This softens the inside and makes juicing easier.
  3. Cut it in half across the middle, not from end to end.
  4. Press and twist. Place the cut side on the reamer, press down and twist the fruit left and right. Move it around the cone so every part of the flesh meets the ridges.
  5. Pour. Hold the juicer by the bowl and pour through the spout. Catch any stray seeds with a spoon.

What fruits work best?

Lemons and limes are a perfect fit. Small oranges and mandarins work well too. For a large orange, press each half in a couple of turns rather than trying to juice it all at once. Grapefruits are usually too big for a countertop reamer.

How to clean it

Citrus juice is acidic and pulp sticks as it dries, so the most important tip is simple: rinse the juicer right after use. After that you can wash it by hand or in the dishwasher. Use a soft sponge or a small brush to clean between the ridges, and skip abrasive pads that could scratch the glaze. Like all ceramics, a juicer should never go on direct heat.

Ideas for fresh citrus

  • A squeeze of lemon in your morning water or tea
  • Fresh lime for salad dressings, guacamole and marinades
  • Lemon juice over grilled fish, vegetables and roasted chicken
  • Homemade lemonade or cocktails for guests
